Gather the good stuff

  • 8 oz sturdy tortilla chips
  • 1/2 lb ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tsp Chica Celita's Seasoning
  • 2 cups shredded cheddar and Monterey Jack
  • 3/4 cup Chica Celita's Medium or Hot Salsa
  • 1 avocado, diced
  • 1/3 cup sour cream and 2 tbsp chopped cilantro

Let’s make it

  1. Heat oven to 400°F. Brown beef in a skillet, breaking it apart, until it reaches 160°F. Drain excess fat. Stir in seasoning, beans and 2 tablespoons water; heat through.
  2. Spread chips on a large rimmed sheet pan. Scatter over the beef mixture and cheese. Bake 7–10 minutes, until melted.
  3. Add salsa, avocado, sour cream and cilantro just before serving. Bring the tray to the table while the chips are crisp.

Little kitchen notes

For a meatless tray, replace the beef with a second drained can of black beans and use vegetarian cheese. Keep cold toppings off until serving.
